Setting up power in trailer - parallel vs series circuit

I'm setting up a dual battery system. I've had a single battery, but now with two batteries I need to figure out which is better parallel vs series circuit?

Does it make a difference?

Parallel doubles the current but the voltage stays the same. Series doubles the voltage but the current stays the same.

2-12volt 100 amp batteries in parallel= 12volt 200 amp
2-6volt 100 amp batteries in series= 12volt 100 amp.

If your doing a 12 volt system, I prefer 2 12 volt batteries in parallel.
