Got a new one for you all. This dish is perfect for a hearty meal under the stars and requires minimal prep and cleanup, making it an ideal choice for your camping adventures. Here's how you can make it:

Ingredients:

  • 1 lb (450g) smoked sausage, sliced into ½-inch pieces
  • 2 bell peppers, any color, chopped
  • 1 large red onion, chopped
  • 2 zucchinis, sliced
  • 1 cup cherry tomatoes
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional: your favorite herbs and spices (like thyme, rosemary, or paprika)

Instructions:

  1. Prep the Ingredients: Start by chopping your vegetables and slicing the sausage. Aim for similar-sized pieces to ensure even cooking.
  2. Make the Foil Packets: Lay out large pieces of aluminum foil, enough to fold over and seal the ingredients. You may want to double-layer the foil for extra strength.
  3. Combine Ingredients: In a large bowl, mix the sausage, bell peppers, red onion, zucchinis, and cherry tomatoes. Add the minced garlic, drizzle with olive oil, and season with salt, pepper, and any other herbs or spices you like. Toss everything together until well-coated.
  4. Assemble the Packets: Divide the mixture evenly among the foil pieces, placing it in the center. Fold the foil over the ingredients and seal the edges to form packets, ensuring there's some space inside for air to circulate.
  5. Cook Over the Campfire: Place the foil packets on the grill grate over the campfire or on hot coals. Cook for about 20-25 minutes, turning halfway through, until the vegetables are tender and the sausage is heated through.
  6. Enjoy: Carefully open the packets (watch out for the steam), and enjoy your delicious campfire meal right out of the foil for an easy cleanup.
This recipe is versatile, so feel free to substitute or add any vegetables you prefer. It's a great way to enjoy a balanced, flavorful meal with minimal fuss while camping. Enjoy your cooking adventure!
