Chicken and Vegetable Campfire Soup

Hey all, here's one you all may enjoy:

Ingredients:

  1. Chicken breast or thigh fillets (1 lb or about 500 grams)
  2. Carrots (2, diced)
  3. Potatoes (2, diced)
  4. Onion (1, chopped)
  5. Garlic cloves (2, minced)
  6. Chicken broth or stock (4 cups)
  7. Salt and pepper (to taste)
  8. Dried herbs like thyme or rosemary (1 teaspoon)
  9. Olive oil (for cooking)
  10. Fresh parsley (for garnish, optional)
  11. Water (if needed)
Instructions:

  1. Prepare the Ingredients: Before you leave for camping, chop the vegetables and chicken into bite-sized pieces. Store them in separate containers or zip-lock bags in your cooler.
  2. Cook the Chicken: Over the campfire or stove, heat a pot with a bit of olive oil. Add the chicken pieces and cook until they are slightly browned and cooked through. Remove the chicken and set aside.
  3. Sauté Vegetables: In the same pot, add the chopped onions and minced garlic. Sauté until the onions are translucent. Then add the diced carrots and potatoes, cooking for a few minutes.
  4. Simmer the Soup: Return the cooked chicken to the pot. Add the chicken broth, dried herbs, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer. Cook until the vegetables are tender, which should take about 20-30 minutes. Add water if you prefer a thinner soup.
  5. Serve: Once the vegetables are cooked and the soup is flavored to your liking, serve it hot. Garnish with fresh parsley if available.
  6. Storage and Reheating: Any leftovers can be stored in a container and reheated over the campfire for the next meal.
